Pomegranate Granita Recipe

A granita is an Italian icy fruit treat. Refreshing, easy to make and diet friendly, icy fruit granitas are the perfect way to end a summer barbecue.

You can choose any type of fruit juice you like or your favorite combinations. Start by pouring your fruit juice into a sauce pan over low heat. Add 1/3 cup of white sugar and whisk until melted. Turn the heat off then add lime juice and vodka (the vodka helps keep it flakey when freezing) pour into your casserole dish and freeze for about 5 hours.

At one hour intervals, rake the freezing granita to get those ice crystal and to avoid it freezing into a solid block. Serve in a chilled glass and top with some fruit cocktail and fresh mint.

Seared Salmon Recipe

It’s good to include lots of fish in our diets; they are rich in essential oils and fatty acids. Seared salmon is not only easy to make, it tastes great and is good for you.

First the tomato relish; start by cutting cherry tomatoes in half, then add fresh corn from the cob, fresh basil leaves, capers, balsamic extra virgin olive oil, salt, peppers, mix together.

While those flavors blend, cut salmon fillets in portions, season with salt and fresh pepper. Coat a sauté pan with olive oil and sear fish for a couple minutes on each side, finish off in the oven for a couple minutes. Steam couscous in low sodium chicken broth, then plate with seared fish on top covered by your sweet corn and tomato relish and fresh herb.
